Cooking Instructions

  1. 1

    Prepare the Mushrooms

Preheat the grill or oven to medium-high heat. Clean the portabella mushrooms with a damp cloth and remove the stems.

  2. 2

    Marinate the Mushrooms

In a bowl, mix olive oil, balsamic vinegar, minced garlic, salt, and pepper. Brush this mixture onto the mushrooms on both sides.

  3. 3

    Grill or Roast the Mushrooms

Place the mushrooms on the grill or in the oven for about 5-7 minutes on each side, until they are tender and have grill marks.

  4. 4

    Prepare the Tomato Topping

While the mushrooms are cooking, chop the tomatoes into small pieces and season with salt and pepper.

  5. 5

    Assemble the Stack

On a plate, stack the grilled mushrooms, followed by a layer of mixed greens, and top with chopped tomatoes. Repeat layers as desired.

  6. 6

    Serve

Drizzle with additional olive oil or balsamic vinegar, if desired, and serve immediately.
