Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Breading
In a shallow dish, add the all-purpose flour mixed with a bit of salt and pepper. Take the marinated chicken out of the fridge and allow excess buttermilk to drip off. Dredge each piece in the flour mixture, pressing lightly to ensure the coating adheres.

Fry the Chicken
In a large heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium-high heat to 350°F (175°C). Fry the chicken pieces in batches for about 12-15 minutes until golden brown and cooked through. Transfer to a wire rack to drain excess oil.

Make the Nashville Hot Sauce
In a small bowl, combine hot sauce with a few tablespoons of the frying oil to create a spicy sauce. Adjust the spice level by adding more hot sauce if desired.

Assemble the Sandwiches
Spread mayonnaise on the bottom half of the brioche buns. Place a piece of fried chicken on top, drizzle with Nashville hot sauce, and top with coleslaw. Add pickles if using, and cover with the top half of the bun.
