    Boil the Eggs

    Place the eggs in a pot and cover them with water. Bring the water to a boil and then cover the pot, removing it from heat. Let it sit for 12-15 minutes, then transfer the eggs to an ice bath to cool.

    Prepare the Filling

    Once the eggs are cool, peel them and cut them in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, salt, black pepper, and paprika until smooth.

    Stuff the Egg Whites

    Spoon or pipe the yolk mixture back into the egg whites. Set aside.

    Prepare for Frying

    Set up a dredging station with three bowls. Place flour in the first bowl, beaten eggs in the second bowl, and panko breadcrumbs in the third bowl.

    Coat the Eggs

    Dip each stuffed egg half first in flour, then in beaten eggs, and finally in the panko breadcrumbs to coat them evenly.

    Fry the Eggs

    Heat oil in a deep skillet over medium heat. Once hot, carefully add the coated egg halves and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
