    Prepare the Onions

    Slice the onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and a pinch of salt, cooking them slowly until they are caramelized and golden brown, about 30-40 minutes.

    Once the onions are caramelized, add the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Pour in the beef broth, add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer. Let it cook for 20-30 minutes, allowing the flavors to meld.

    While the soup simmers, preheat your oven to 350°F (175°C). Slice the baguette into thick slices and place them on a baking sheet. Toast in the oven until golden brown.
