    Prepare the Crust

    Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Make the Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, mixing until well incorporated. Mix in the sour cream and vanilla extract. Finally, add the eggs one at a time, mixing just until combined after each addition.

    Combine and Bake

    Pour the cream cheese filling over the graham cracker crust in the springform pan. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

    Cool and Chill

    Turn off the oven and crack the door, allowing the cheesecake to cool slowly for 1 hour. Then, refrigerate for at least 4 hours, or overnight for best results.

    Serve with Strawberries

    Before serving, wash and slice the fresh strawberries. Arrange them on top of the chilled cheesecake. Slice and enjoy!
