Prepare Cauliflower

    Cut and Coat Cauliflower

    Preheat your oven to 450°F (230°C). Cut the cauliflower into bite-sized florets. In a bowl, toss the cauliflower with buffalo sauce until evenly coated.

    Bake Cauliflower

    Spread the coated cauliflower on a baking sheet lined with parchment paper. Bake for about 20-25 minutes, or until the cauliflower is crispy and golden, flipping halfway through.

Prepare Fried Okra

    Prepare the Batter

    In a bowl, mix the cornmeal, flour, salt, and non-dairy milk until smooth. The batter should be thick enough to coat the okra slices.

    Fry the Okra

    Heat oil in a deep frying pan over medium heat. Dip the okra slices into the batter and carefully add them to the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Assemble the Wrap

    Layer Ingredients

    On each tortilla, layer shredded lettuce, sliced tomato, sliced cucumber, a generous scoop of buffalo cauliflower, black-eyed peas, and fried okra.

    Fold the sides of the tortilla in and roll it up tightly from the bottom to the top. Cut in half if desired and serve immediately.
