    Chop the Vegetables

    Finely chop the onion, green bell pepper, and celery. Mince the garlic cloves and slice the okra.

    Rinse the Legumes

    Drain and rinse the canned kidney beans and black-eyed peas under cold water.

Cooking

    Sauté the Base

    In a large pot, heat olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5-7 minutes until softened.

    Add Garlic and Spices

    Add minced garlic, Cajun seasoning, thyme, salt, and black pepper to the pot, and cook for another 2 minutes until fragrant.

    Add Broth and Legumes

    Pour in the vegetable broth and add the rinsed kidney beans and black-eyed peas. Stir to combine.

    Incorporate Okra

    Add the sliced okra and bay leaf to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.

    Add Spinach and Coconut Milk

    Stir in the fresh spinach and coconut milk. Simmer for an additional 5 minutes until the spinach wilts.

    Taste and Adjust Seasoning

    Taste the gumbo and adjust the seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.
