Preparation of Chicken

    Marinate the Chicken

    In a large bowl, combine the buttermilk and hot sauce. Add the chicken wings and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for better flavor.

Coating

    Mix the Coating

    In a separate bowl, mix together the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, black pepper, and salt until well combined.

    Dredge the Wings

    Remove the marinated chicken wings from the refrigerator. Shake off excess buttermilk and dredge each wing in the flour mixture, ensuring they are evenly coated. Place coated wings on a wire rack to rest for 10 minutes.

Frying

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Wings

    Carefully add the coated chicken wings to the hot oil in batches. Fry for 8-10 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).

    Remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.

Saucing

    If desired, toss the fried wings in your choice of sauce such as buffalo or barbecue. Serve immediately.
