Method
For the Shrimp Filling
- 1
Prepare the Shrimp
Rinse the shrimp under cold water and pat dry with paper towels.
- 2
Make the Breading
In a large bowl, combine the all-purpose flour, cornmeal, cayenne pepper, paprika, salt, and black pepper. Mix well.
- 3
Soak in Buttermilk
Pour the buttermilk into another bowl. Dip each shrimp into the buttermilk, allowing any excess to drip off, then dredge in the flour mixture until well coated.
- 4
Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Shrimp
Carefully place the breaded shrimp in the hot oil, frying them in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
For the Sandwich Assembly
- 6
Prepare the Bread
Slice the French bread or Po'Boy rolls lengthwise, leaving one side intact.
- 7
Layer the Fillings
Spread the shredded lettuce inside the bread, followed by the fried shrimp, sliced tomatoes, and pickles.
- 8
Add Hot Sauce
Drizzle hot sauce over the fillings if desired.
- 9
Serve
Close the sandwich and serve immediately while the shrimp are still warm and crispy.
