Filling Preparation

Prepare the Peaches
Peel and slice the fresh peaches into thin wedges. Place them in a large mixing bowl.

Mix the Filling
Add the granulated sugar, lemon juice, ground cinnamon, and cornstarch to the peaches. Toss everything together until the peaches are well coated. Set aside to allow the juices to marinate.

Combine Dry Ingredients
In a separate mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Add Wet Ingredients
Pour in the milk and melted unsalted butter into the dry mixture. Stir until just combined; do not overmix.
Baking

Preheat the Oven
Preheat your oven to 350°F (175°C).

Assemble the Cobbler
Spread the peach mixture evenly in the bottom of a greased baking dish. Pour the batter over the peaches evenly.

Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
