Make the Mint Syrup
In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and add the fresh mint leaves. Let it steep for about 10-15 minutes to infuse the mint flavor. Strain the syrup into a bowl and set aside to cool.

Muddle the Mint
In a sturdy glass or cocktail shaker, add the fresh mint leaves. Pour in the cooled mint syrup and gently muddle the mint leaves with a muddler or the back of a spoon to release the oils. Be careful not to tear the leaves too much.

Combine Ingredients
Add the bourbon to the glass with the muddled mint and syrup. Stir gently to combine all the ingredients.

Prepare the Glass
Fill a highball glass or a julep cup with crushed ice. Pour the mint bourbon mixture over the ice until the glass is full.
