Preparing the Fries

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the frozen French fries in batches until golden and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
Preparing the Brisket

Warm the Brisket
In a saucepan, combine the cooked brisket with barbecue sauce over medium heat. Stir occasionally until heated through, about 5 minutes. Remove from heat.
Assembling the Loaded Fries

Layer the Ingredients
On a large platter or baking sheet, arrange the crispy fries in an even layer. Spoon the warm brisket mixture over the fries, followed by the shredded cheese.

Add Fresh Toppings
Dice the tomato and onion. Sprinkle them evenly over the cheese. Add a dollop of sour cream and scatter chopped green onions on top.

Melt the Cheese
Place the loaded fries under a broiler for 2-3 minutes or until the cheese is melted and bubbly. Keep a close eye to prevent burning.
