Prepare the Tomatoes
Wash the green tomatoes and slice them into 1/4-inch thick slices. Lay the slices on a paper towel and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture.

Set Up Breading Station
In a shallow bowl, combine the all-purpose flour, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk. In a third bowl, place the cornmeal.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, without overcrowding the pan. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
House-made Remoulade

Mix the Ingredients
In a medium bowl, combine the mayonnaise, Dijon mustard, capers, chopped parsley, lemon juice, and hot sauce. Stir until well combined.

Chill the Remoulade
Cover the remoulade and refrigerate for at least 30 minutes to let the flavors meld before serving.
