Method

Brining the Wings

    Prepare the Brine

    In a large pot, combine water, salt, brown sugar, garlic powder, onion powder, black peppercorns, and dried thyme. Stir until salt and sugar are dissolved.

    Brine the Wings

    Add the chicken wings to the brine solution. Ensure they are fully submerged. Cover and refrigerate for at least 4 hours, or preferably overnight.

Cooking the Wings

    Heat the Oil

    In a large deep fryer or heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).

    Fry the Wings

    Remove the wings from the brine and pat dry with paper towels. Carefully add the wings in batches to the hot oil and fry for 8-10 minutes or until golden brown and crispy.

    Drain the Wings

    Using a slotted spoon, remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.

Preparing the Sauce

    Make the Sauce

    In a saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce, honey, and minced garlic. Cook for 2-3 minutes until heated through, stirring occasionally.

Tossing the Wings

    Combine Wings and Sauce

    In a large bowl, toss the fried wings with the prepared sauce until they are well coated.
