Method

Preparation

  1. 1

    Prep the Corn

Husk the corn and remove all silk strands. Rinse the corn under cold water to clean off any debris. Pat dry with a kitchen towel.

  2. 2

    Make the Batter

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, and salt. In another bowl, whisk together the eggs and milk until well combined. Gradually add the egg mixture to the dry ingredients, stirring until smooth and lump-free.

Frying

  1. 3

    Heat the Oil

In a large deep skillet or frying pot, heat the vegetable oil over medium-high heat. To test if the oil is ready, drop a small amount of batter into the oil; if it sizzles and bubbles, the oil is hot enough.

  2. 4

    Coat the Corn

Dip each ear of corn into the batter, making sure to coat it evenly. Allow the excess batter to drip off before placing it in the hot oil.

  3. 5

    Fry the Corn

Carefully place the coated corn into the hot oil. Fry each ear for about 5-7 minutes, turning occasionally until golden brown and crispy on all sides. Remove the corn from the oil and place it on a plate lined with paper towels to drain excess oil.

Serving

  1. 6

    Add Toppings

While the corn is still hot, sprinkle with chili powder, grated Parmesan cheese, and chopped cilantro if desired. Serve immediately.
