    Prepare the Onions

    Slice the large onion and caramelize it in a skillet over medium heat until golden brown, about 10-15 minutes. Set aside.

    Cook the Lamb and Bacon

    In the same skillet, cook the bacon until crispy, then remove and chop into small pieces. In the bacon fat, add the ground lamb and cook until browned, about 8-10 minutes. Drain excess fat.

    Combine Ingredients

    In a large bowl, mix the cooked lamb, bacon, shredded mozzarella, parmesan cheese, tomato sauce, and Mexican oregano. Stir until well combined.

    Assemble

    Spread the mixture onto a baking dish. Top it with the caramelized onions evenly.

    Bake

    Preheat the oven to 375°F (190°C) and bake for 20-25 minutes, until the cheese is melted and bubbly.

    Remove from the oven and let cool slightly. Drizzle with tzatziki sauce before serving.
