Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Preheat the Oil
In a large pot or deep fryer, heat oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry. Fry in batches until golden brown and crispy, about 5-7 minutes.

Season the Fries
Remove fries from the oil and drain on paper towels. Sprinkle with salt while hot.

Make the Black Garlic Aioli
In a bowl, combine mayonnaise, minced black garlic, lemon juice, minced garlic, and salt. Mix well until smooth.

Serve
Serve the pile of fries hot with a side of black garlic aioli for dipping.
