Preparation Steps

    Cook Quinoa

    Rinse 1 cup of quinoa under cold water, then add to a pot with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all water is absorbed. Fluff with a fork and set aside.

    Roast Vegetables

    Preheat the oven to 400°F (200°C). Cut butternut squash and cauliflower into bite-sized pieces. Toss them with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes or until tender and slightly caramelized.

    Prepare Spinach and Avocado

    While the vegetables are roasting, wash the fresh spinach and set aside. Slice the avocado in half, remove the pit, scoop out the flesh, and cut into slices.

    Assemble the Bowl

    In a serving bowl, layer the cooked quinoa, roasted butternut squash, roasted cauliflower, fresh spinach, and sliced avocado.

    Add Toppings

    Drizzle house-made BBQ sauce and sriracha aioli over the top. Sprinkle with black sesame seeds.
