Roast the Cauliflower
Preheat your oven to 400°F (200°C). Cut the cauliflower into florets and toss them in olive oil, salt, and black pepper. Spread the florets on a baking sheet and roast for about 25-30 minutes or until golden and tender.

In a medium saucepan over low heat, combine the heavy cream and minced garlic. Allow the cream to warm up slightly, then gradually add the shredded Gouda cheese, stirring constantly until melted and smooth. Add the crumbled goat cheese and stir until fully incorporated.

Once the cauliflower is roasted, transfer it to a serving dish. Pour the cheese mixture over the cauliflower, ensuring it is well coated. Garnish with fresh herbs if desired. Serve warm with bread or vegetables for dipping.
