Prepare the Queso
In a cast iron skillet, combine sharp cheddar cheese, Monterey Jack cheese, cream cheese, and milk. Stir in diced jalapeños, minced garlic, cumin, and salt.

Melt the Mixture
Place the skillet over medium heat and stir continuously until the cheeses have melted and the mixture is creamy. Adjust the salt to taste and remove from heat.

Add Pico de Gallo
Fold in the fresh cilantro and let the queso sit for a few minutes to thicken slightly. Top with pico de gallo before serving.

Make the Tortilla Chips
While the queso is resting, cut the corn tortillas into triangles. Heat the vegetable oil in a large skillet over medium-high heat. Fry the tortilla triangles in batches until golden brown and crispy. Drain on paper towels and season with salt.

Serve the cast iron queso hot, alongside the house-made tortilla chips.
