Cook the Pasta
In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Add Cheeses
Reduce heat to low and add cheddar, monterey jack, and cream cheese to the skillet. Stir until all the cheese has melted and the sauce is smooth. Season with salt and black pepper.

Combine with Pasta
Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.

Incorporate Kimchi
Fold in the chopped kimchi and fish sauce into the mac and cheese mixture.

Prepare for Baking
Preheat your oven to 350°F (175°C). Spread the mac and cheese mixture evenly in the cast iron skillet.

Top with Panko
Sprinkle the panko breadcrumbs evenly over the top of the mac and cheese.

Bake
Bake in the preheated oven for about 20 minutes, or until the top is golden brown and crispy.
