Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breast with salt and pepper. Grill the chicken for 6-7 minutes on each side, or until thoroughly cooked. Remove from grill and let it rest for 5 minutes before slicing.

Prepare the Vegetables
While the chicken is resting, chop the celery stalks into small pieces and set aside. If you are using whole carrots, slice them into thin sticks or rounds, and mix with pickling liquid.

Toss the Salad
In a large bowl, combine the mixed greens, celery, pickled carrots, and pico de gallo. Toss gently to mix.

Add the Chicken
Slice the grilled chicken and add it on top of the salad mixture.

Finish with Cheese and Dressing
Sprinkle crumbled blue cheese over the top and drizzle with your choice of house-made ranch or blue cheese dressing. Serve immediately.
