    Prepare the Vegetables

    Chop the onion, bell pepper, and tomato into small pieces. Rinse the spinach and set aside.

    Whisk the Eggs

    In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Cooking

    Sauté the Vegetables

    In a large skillet over medium heat, add a splash of oil and sauté the onion and bell pepper until soft. Add the spinach and tomato, cooking until the spinach is wilted.

    Add the Egg Mixture

    Pour the egg mixture over the sautéed vegetables in the skillet. Cook until the edges begin to set, then gently stir to cook the eggs evenly.

    Add Cheese

    Sprinkle the cheddar cheese on top and cover the skillet to allow the cheese to melt, about 2-3 minutes.

    Plate the Dish

    Once the eggs are fully cooked and the cheese is melted, serve the breakfast on plates. Garnish with fresh basil and sliced avocado.
