Tortillas

Rice and Beans

Method

Tortillas

  1. 1

    Make the Tortilla Dough

In a large mixing bowl, combine the flour, salt, and baking powder. Mix well.

  2. 2

    Add Wet Ingredients

Add vegetable oil and warm water to the flour mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Knead the dough on a floured surface for about 2-3 minutes until smooth. Divide into 8 equal portions and roll each into a ball.

  4. 4

    Roll Out Tortillas

Using a rolling pin, roll each ball out into a thin circle, about 6-8 inches in diameter.

  5. 5

    Cook Tortillas

Heat a skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side until lightly browned. Keep warm in a towel.

Meat Filling

  1. 6

    Cook the Meat

In a large skillet over medium heat, add the diced onion and cook until translucent, about 3-4 minutes. Add ground beef or chicken and cook until browned.

  2. 7

    Add Seasoning

Stir in taco seasoning and garlic powder. Cook for an additional 2-3 minutes until the meat is fully cooked and seasoned.

Rice and Beans

  1. 8

    Cook the Rice

In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low and cover. Cook for about 15-20 minutes until rice is tender.

  2. 9

    Add Beans

Once the rice is cooked, stir in the rinsed black beans, cumin, and salt to taste. Cook for another 5 minutes until heated through.

Assemble Tacos

  1. 10

    Prepare Tacos

Take a warm tortilla and add a layer of the meat filling, followed by a scoop of rice and beans. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and optional jalapeños.

  2. 11

    Serve

Serve the tacos immediately and enjoy!
