Preparing the Meat

Cook the Beef
In a large pot, combine the beef chuck roast, quartered onion, minced garlic, and beef broth. Season with cumin, chili powder, salt, and black pepper.

Simmer
Bring the mixture to a boil over medium-high heat, then reduce to low and cover. Let it simmer for about 2.5 to 3 hours, or until the beef is tender and easily shredded.

Prepare Tortillas
Heat a large skillet over medium heat. Place a tortilla in the skillet and sprinkle a generous amount of shredded cheese on one half of the tortilla.

Add Meat
Top the cheese with a portion of the shredded beef.

Fold and Cook
Fold the tortilla over to cover the filling. Cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted. Remove from skillet and repeat with the remaining tortillas.

Serve with Broth
Serve the quesabirrias hot with the reserved beef broth in small bowls for dipping.
