    Prepare the Marinade

    In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper. Mix well until all ingredients are fully blended.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

    Grill the Chicken

    Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 75°C/165°F).

    Garnish

    Once cooked, remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped fresh cilantro before serving.

    Cook the Rice

    In a medium saucepan, bring the vegetable broth to a boil. Add brown rice, cover, and reduce heat to low. Simmer for about 45 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes or until they are tender. Season with salt and black pepper to taste.
