Preparation of Rice and Beans

Cook the Rice
Rinse 1 cup of white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Heat the Beans
In a small pot, heat 1 cup of black beans over medium heat. Stir occasionally until warmed through, about 5-7 minutes. Season with salt and pepper to taste.
Cooking the Protein

Brown the Meat
In a large skillet over medium-high heat, add 1 pound of ground beef or chicken. Cook, breaking it apart with a spatula, until browned and fully cooked, about 7-10 minutes.

Add Seasoning
Once the meat is browned, drain any excess fat if necessary. Sprinkle 2 tablespoons of taco seasoning over the meat and add 1/4 cup of water. Stir well to combine and allow to simmer for an additional 3-5 minutes until the mixture thickens slightly.

In bowls, start by adding a layer of the cooked rice, followed by a layer of the warmed black beans. Top with the seasoned ground meat.

Finish by adding desired toppings such as shredded cheese, diced tomatoes, sour cream, chopped lettuce, and sliced jalapeños.
