Preparing the Taco Filling

In a large skillet, heat the olive oil over medium heat. Add the ground chicken or ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

Once the meat is cooked, add the taco seasoning and stir until well combined.

Pour in 1 cup of water and stir to combine. Bring the mixture to a simmer and let cook for 10-15 minutes, or until the liquid has reduced and thickened. Stir occasionally.

Prepare Tortillas
Warm the corn or flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Place a generous spoonful of the taco filling onto each tortilla. Top with shredded cheese, lettuce, diced tomatoes, and a drizzle of crema.
