Prepare glass (optional)

If you want a lightly scented rim, rub the glass edge with a lime wedge and dip the rim into a small plate with the optional mint sugar (blend fine sugar with a few chopped mint leaves). Set the glass aside.

Muddle mint

Place 6–8 fresh mint leaves in a cocktail shaker. Add the simple syrup and gently muddle the leaves 4–6 times to release oils without tearing them into small bits.

Build the cocktail

Add Bendrick's gin and fresh lime juice to the shaker with the muddled mint. Fill the shaker halfway with ice.

For a brighter, frothier texture, first shake without ice for about 8–10 seconds (dry shake) to further emulsify the mint and citrus, then add ice and shake vigorously for 12–15 seconds until the shaker is well chilled.

Double strain

Double strain the cocktail through a fine mesh strainer into the prepared chilled coupe or a rocks glass filled with fresh ice to remove mint bits and shards of ice.

Garnish and serve

Gently slap a mint sprig between your palms to release its aroma and place it on top of the cocktail as garnish. Serve immediately.
