Prepare glass
If desired, chill an old-fashioned or rocks glass by filling it with ice and setting it aside while you mix the cocktail. Alternatively, place the glass in the freezer for a few minutes.
Combine ingredients
Add 2 oz mezcal, 0.75 oz reposado or añejo tequila, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 2 dashes Angostura bitters, and 1 dash orange bitters to a cocktail shaker.
Add ice and shake
Fill the shaker with ice (about 1 cup). Seal and shake vigorously for 10–15 seconds until the outside of the shaker feels cold and the mixture is well chilled and slightly diluted.
Prepare serving glass
Discard the ice from the chilled rocks glass. Add one large clear ice cube or a few fresh ice cubes to the glass if you like your cocktail on the rocks; otherwise, strain neat into the chilled glass.
Strain and finish
Double-strain the shaken cocktail into the prepared glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp. This yields a clean, silky drink.
