Chill and prepare bed

Spread crushed ice over a large serving platter or individual plates in an even 1–1.5 inch layer to create a stable bed for oysters. Keep the remaining ice in the freezer or cooler until ready to top up.

Shuck (if needed)

If oysters are not already shucked, hold an oyster in a towel or glove with the cup (deep) side down. Insert an oyster knife at the hinge, twist gently to pop, run the knife under the top shell to sever the muscle, discard top shell, then slide the knife under the oyster to free it from the cup. Keep oyster liquor in the shell. Place each oyster on the ice bed immediately as you finish it.

Arrange and finish

Arrange 24 oysters evenly on the iced platter. Place small bowls with mignonette, horseradish cocktail sauce, and extra hot sauce around the platter, along with lemon wedges and forks. Provide extra crushed ice to top up during service so shells don't tip.

Mignonette

Combine the minced shallot and both vinegars in a small bowl. Stir in the sea salt and freshly ground black pepper until salt dissolves. Add chopped parsley if using. Taste and adjust acidity or salt — mignonette should be bright and slightly tangy. Chill for at least 10 minutes so flavors meld. Transfer to a small serving bowl.

Horseradish Cocktail Sauce

In a separate small bowl, whisk together prepared horseradish and ketchup until smooth. Add lemon juice, Worcestershire, hot sauce (if using), and black pepper. Taste and adjust heat or acidity—add more horseradish for heat or more ketchup for sweetness/balance. Chill briefly if desired, then transfer to a serving bowl.

Arrange cocktail forks, lemon wedges, and sauce bowls around the platter. Keep an oyster knife and towel accessible if guests will shuck at the table. Replenish crushed ice as needed to keep oysters level and cold throughout service.
