Prepare citrus
Cut one fresh lime in half and juice it until you have 0.75 oz (approx. 3/4 oz) of fresh lime juice. Strain the juice to remove seeds and excess pulp if desired.
Measure ingredients
Measure 2 oz Plantation rum and 0.5 oz agave syrup (use a jigger or measuring tool).
Combine and chill
Add the rum, fresh lime juice, and agave syrup to a cocktail shaker. Add enough ice to fill the shaker roughly 3/4 full (about 1 cup).
Shake vigorously
Secure the shaker and shake vigorously for 10β15 seconds until the outside of the shaker becomes frosty and the mixture is well chilled and slightly diluted. This creates proper texture and balance.
Strain and serve
Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer (or a single strainer if fine mesh isn't available). This removes ice shards and any pulp for a clean, silky drink.
Garnish
Express a lime twist over the cocktail to release oils, then drop a lime wheel or twist onto the surface as garnish.
Serve
Serve immediately while cold. Adjust future batches by increasing agave by 0.25 oz if you prefer sweeter, or decreasing if you prefer more tartness.
