Prepare aromatics
In a medium saucepan, heat 1 tbs sesame oil over medium heat. Add the smashed garlic cloves and sliced ginger and sweat gently for 1 minute until fragrant but not browned.
Build stock
Add 4 cups low-sodium chicken stock and 1 tbs dry white wine to the saucepan. Bring to a gentle simmer.
Season stock
Stir in 1 tsp light soy sauce, 1 tsp salt, and 1 tsp white pepper. Taste and adjust seasoning; the stock should be savory but not overly salty because crab adds sweetness.
Poach crab
Add the picked blue crab meat to the simmering stock and gently poach for 2–3 minutes just to warm the crab and allow its flavor to infuse the broth. Avoid prolonged cooking to keep meat tender.

Sauté mushrooms & aromatics
In a large sauté pan or wok, heat 2 tbs canola oil over medium-high heat. Add minced ginger and minced garlic, cook 15–20 seconds until aromatic. Add sliced shiitake mushrooms and julienned carrot, stir-fry 1–2 minutes until mushrooms release moisture and carrots soften slightly. Add the white parts of the scallions and stir 30 seconds.
Combine noodles
Add the cooked noodles to the sauté pan with the vegetables. Toss briefly to combine, and add a splash (2–3 tbs) of the reserved noodle water to loosen the noodles if dry.
Assembly & Garnish
Finish broth (if thicker soup desired)
If you prefer a slightly thicker broth, whisk 1 tbs cornstarch with 1 tbs cold water to make a slurry. Return the crab-stock to a simmer and stir in the slurry a little at a time until the broth reaches desired body (about 30–60 seconds). Do not over-thicken.
Storage note
Leftover broth can be refrigerated for up to 2 days. Store crab meat separately if possible; reheat gently to avoid toughening.
