Preparing the Yam Fries

Cut the Yams
Preheat your oven to 425°F (220°C). Peel the yams and cut them into fries, about 1/4 inch thick.

Season and Toss
In a large bowl, toss the yam fries with olive oil, salt, black pepper, paprika, and garlic powder until evenly coated.

Bake the Fries
Spread the yam fries in a single layer on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, flipping halfway through, until crispy and golden brown.
Making the Chipotle Maple Mayo

Combine Ingredients
In a small bowl, combine mayonnaise, chipotle in adobo, maple syrup, and lime juice. Mix until smooth.

Adjust Seasoning
Taste and adjust the seasoning as desired. You can add more chipotle for heat or more maple syrup for sweetness.
