Prepare the Ginger
Peel and finely grate the fresh ginger root.
Mix Ingredients
In a large bowl, combine the grated ginger, sugar, lemon juice, and 2 cups of water. Stir until the sugar is completely dissolved.
Add Yeast
In a small bowl, dissolve the active dry yeast in 1 cup of warm water (not boiling). Let it sit for about 5 minutes until it becomes frothy. Add this mixture to the ginger-sugar mixture and stir well.
Ferment the Mixture
Cover the bowl with a clean cloth and let it sit at room temperature for 24 to 48 hours. You should see bubbles forming as the yeast ferments the mixture.
Strain the Mixture
After fermentation, strain the mixture through a fine mesh sieve into a clean container to remove the ginger pulp.
Carbonate the Ginger Beer
Add the remaining 2 cups of water to the strained mixture. If you prefer a sweeter drink, you can add more sugar to taste. Pour the ginger beer into bottles, leaving some space at the top. Seal the bottles tightly.
Chill and Serve
Refrigerate the bottles for at least another 24 hours to carbonate. Serve cold, garnished with lemon slices and mint leaves.
