Mussels Preparation

    Clean the Mussels

    Rinse the Salt Spring mussels under cold water, scrubbing the shells to remove any debris. Remove beards if necessary.

    Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add shallots and garlic, sautéing until fragrant and softened.

    Cook Mussels

    Add the cleaned mussels and white wine to the pot. Cover and steam until the mussels open, about 5-7 minutes. Season with salt, pepper, and stir in fresh parsley before serving.

Fries Preparation

    Prepare Potatoes

    Peel and cut the Kennebec potatoes into thick fries. Soak in cold water for at least 30 minutes to remove excess starch.

    Fry Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes per batch. Drain on paper towels and season with salt.

House Made Mayo Preparation

    Make the Mayo

    In a bowl, whisk together egg yolks, Dijon mustard, and lemon juice. Slowly drizzle in the vegetable oil while whisking continuously until the mixture thickens. Season with salt to taste.
