Make the Filling
In a mixing bowl, combine cream cheese, granulated sugar, vanilla extract, and egg. Mix until smooth and creamy. Refrigerate for at least 30 minutes.

Form the Cheesecakes
Once the filling is chilled, take small portions and shape them into discs. Place them on a parchment-lined tray.

Prepare the Batter
In a separate bowl, whisk together milk, eggs, and vanilla extract. In another bowl, mix flour, baking powder, and salt. Gradually combine the two mixtures until smooth.
Frying

Heat the Oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Fry the Cheesecakes
Dip each cheesecake disc into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

In a bowl, mix granulated sugar and ground cinnamon. Roll the fried cheesecakes in the cinnamon sugar mixture while still warm.
