Method
Preparation
- 1
Malt Preparation
In a large pot, combine the 20 cups of water and 5 cups of barley malt. Heat the mixture to around 150°F (65°C) and hold this temperature for 30 minutes to allow the malt to steep and extract flavors.
- 2
Hops Addition
After 30 minutes, bring the mixture to a boil. Once boiling, add 2 cups of hops and let it boil for an additional 60 minutes. This helps in bitterness and aroma.
- 3
Cooling the Wort
After the boil, cool the wort (the liquid from the boiled mixture) quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
- 4
Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Add 1 tablespoon of yeast, and stir gently to mix. Seal the vessel with an airlock and place it in a dark, temperature-controlled environment (around 68°F/20°C) for 1-2 weeks.

Elderflower and Honey Infusion
After 1 week of fermentation, gently stir in 1 cup of dried elderflowers and 1 cup of honey. Add 2 tablespoons of orange zest for a citrusy aroma. Seal the vessel again and allow it to ferment for another week.
