Preparation

  1. 1

    Prepare the Protein

If using chicken, trim any excess fat and cut into bite-sized pieces. Season with salt and pepper. If using steak, slice into thin strips. For Kalua pork, shred the cooked pork if not already done.

Cooking

  1. 2

    Cook the Protein

In a large skillet or grill over medium-high heat, add a tablespoon of oil. Cook the chicken for about 7-10 minutes until fully cooked, or cook steak for 3-5 minutes for medium-rare. If using Kalua pork, heat it through.

  2. 3

    Add BBQ Sauce

Once the protein is cooked, pour the BBQ sauce over it and stir to coat evenly. Cook for another 2-3 minutes until the sauce is heated through.

Assembly

  1. 4

    Prepare the Toppings

While the protein is cooking, thinly slice the red onion and chop the cilantro.

  2. 5

    Assemble the BBQ

In serving bowls or on a platter, layer the BBQ protein, top with sliced red onions, sprinkle with chopped cilantro, and finish with shavings of smoked Gouda. Drizzle ranch dressing over the top.
