Melt the Chocolate
Chop the dark chocolate into small pieces and melt it gently in a heatproof bowl over simmering water or in the microwave. Stir until smooth and let it cool slightly.

Prepare the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Reserve a small portion for topping the mousse later.

Whip the Egg Whites
In a clean bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream. Then fold in the beaten egg whites, being careful not to deflate the mixture.

Add Vanilla
Stir in the vanilla extract until well combined.

Chill the Mousse
Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.

Serve
Before serving, top the mousse with reserved whipped cream and garnish with chocolate shavings.
