Prepare the crust
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Bake the crust
Preheat the oven to 350°F (175°C). Bake the crust for about 8 minutes until golden. Remove from the oven and let it cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Add in sour cream, vanilla extract, and lemon juice. Mix until combined.

Add eggs
Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Bake the cheesecake
Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly.

Cool and refrigerate
Turn off the oven and leave the cheesecake inside for 1 hour. Then, remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight for best results.

Serve
Carefully remove the cheesecake from the springform pan. Slice and serve as desired, optionally with fruit toppings or whipped cream.
