Crust Preparation

    Make the Pie Crust

    In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs. Slowly add ice water, one tablespoon at a time, mixing until the dough comes together.

    Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    After chilling, roll out the dough on a floured surface to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish, trimming the excess.

Filling Preparation

    Prepare the Pork Filling

    In a large bowl, mix the shredded pork with buffalo sauce and adobo seasoning. Ensure the pork is well coated.

    Add Pineapple and Jalapenos

    Gently fold in the drained pineapple chunks and sliced jalapenos into the pork mixture.

    Assemble the Pie

    Pour the pork filling into the prepared pie crust, spreading it evenly. Top with shredded mozzarella cheese.

Baking

    Preheat the oven to 375°F (190°C). Bake the pie for 30-35 minutes, or until the cheese is bubbly and golden brown.
