Cooking Pasta

    In a large pot, bring water to a boil. Add salt and pasta shells. Cook according to package instructions until al dente. Drain and set aside.

Making Cheese Sauce

    In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbly and slightly golden.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to stir until the mixture thickens, about 5 minutes.

    Incorporate Cheeses

    Reduce the heat to low, and begin adding the cheese: start with sharp cheddar, followed by mozzarella, parmesan, gouda, cream cheese, and blue cheese. Stir until all the cheese is melted and the sauce is smooth.

Combining Ingredients

    Combine Pasta and Cheese Sauce

    In a large mixing bowl, combine the cooked pasta shells with the cheese sauce. Mix well until all pasta is evenly coated.

Preparing Toppings

    Prepare Garlic Butter Croutons

    Preheat the oven to 350°F (175°C). In a small bowl, mix the olive oil and minced garlic. Toss the bread crumbs in this mixture, then spread on a baking sheet. Bake for 10-12 minutes or until golden brown.
