Bratwurst Preparation

Prepare the Meat Mixture
In a large bowl, combine ground pork shoulder, pork fat, minced garlic, salt, black pepper, ground coriander, and ground mustard. Mix well.

Add Beer
Gradually add the Katy Trail Pale Ale to the meat mixture and mix until fully incorporated.

Stuff the Sausages
Soak the hog casings in water for about 30 minutes. Rinse the casings and fit them onto a sausage stuffer. Stuff the meat mixture into the casings, being careful not to overfill. Twist sausages into desired lengths and tie off the ends.

Boil the Potatoes
Peel and cut russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Heat the Sauerkraut
In a small saucepan, add sauerkraut and caraway seeds. Heat over medium heat until warmed through, about 5 minutes.
