Pork Chop

    Prepare the Pork Chops

    Pat the pork chops dry with paper towels. Drizzle with olive oil, then season both sides with salt, black pepper, and garlic powder.

    Grill the Pork Chops

    Preheat a grill or grill pan over medium-high heat. Grill the pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let them rest for 5 minutes.

Blistered Jalapeno Peach Preserves

    Blister the Jalapenos

    On the hot grill or stovetop, place the jalapenos and blister until the skin is charred and blackened, about 5-7 minutes. Remove and let cool, then slice them open and remove seeds.

    Prepare the Peach Sauce

    In a small saucepan, combine the blistered jalapenos, peach preserves, diced fresh peach, and lime juice. Heat over low flame until warmed through, about 5 minutes. Stir well to combine.

Mashed Potatoes

    Cook the Potatoes

    Peel and dice the russet potatoes. Place them in a pot of salted water and bring to a boil. Cook for 15-20 minutes until tender, then drain.

    Add the butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

Sautéed Vegetables
