For the Grilled Red Snapper

Prepare the Marinade
In a small bowl, mix olive oil, salt, black pepper, paprika, and lemon juice to create a marinade.

Marinate the Fish
Brush the marinade over the red snapper fillets and let them marinate for at least 30 minutes.

For the Creole Cream Sauce

Add Seasoning
Stir in Cajun seasoning, salt, and black pepper. Cook for an additional minute.

Add Cream
Pour in the heavy cream and bring to a simmer. Cook for another 5-7 minutes until the sauce thickens slightly.

Finish the Sauce
Stir in chopped fresh parsley and adjust seasoning if necessary. Remove from heat and set aside.
For the Dirty Rice

Cook the Meat
In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat.

Combine with Rice
Stir in the long-grain rice and cook for an additional minute.

Add Broth and Seasoning
Pour in chicken broth, Cajun seasoning, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
