Cook the Pork
Add pork shoulder to the pot and season with adobo sauce, cumin, salt, and pepper. Cover and cook on low heat for 2-3 hours until the pork is tender and easily shredded.

Cook the Rice
In a medium saucepan, bring water to a boil. Add rice and salt, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
Pico de Gallo Preparation

Make the Pico de Gallo
In a bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow flavors to meld.

Assemble the Burrito
Warm the flour tortillas in a skillet or microwave. On each tortilla, layer adobo pork, black beans, rice, pico de gallo, and drizzle with spinach queso. Roll up tightly and serve.
