Adobo Braised Pork

    Prepare the Pork

    Cut the pork shoulder into large chunks and season with salt and black pepper.

    Sear the Pork

    In a large pot, heat a bit of oil over medium-high heat. Sear the pork chunks until browned on all sides, about 5-7 minutes.

    Add Aromatics

    Add chopped onion and minced garlic to the pot, cooking until softened, about 3-4 minutes.

    Simmer the Pork

    Pour in the adobo sauce and water, and add the bay leaves. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 2-3 hours, or until the pork is tender and easily shreds.

    Shred the Pork

    Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and stir to combine with the sauce.

Southwestern Slaw

    Prepare the Vegetables

    Shred the green cabbage, grate the carrot, and chop the red bell pepper.

    Mix the Slaw

    In a large bowl, combine the cabbage, carrot, red bell pepper, and chopped cilantro.

    Dress the Slaw

    In a separate bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour over the slaw mixture and toss to coat.

Pico de Gallo

    Chop Ingredients

    Dice the tomatoes, red onion, and jalapeño. Chop the cilantro.

    Mix Pico de Gallo

    In a bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro. Add lime juice and salt, and mix well.

    Assemble the Tacos

    Fill each taco shell with a generous portion of adobo braised pork, followed by a handful of southwestern slaw and a spoonful of pico de gallo.

    Cook the rice according to package instructions.

    Open the can of black beans, heat in a saucepan over medium heat until warmed through.
