Method

Prepare Filling

  1. 1

    Rinse Rice

Rinse the short-grain rice under cold water until the water runs clear. Drain and set aside.

  2. 2

    Cook Onions and Pine Nuts

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and pine nuts, cooking until the onion is translucent and the pine nuts are lightly toasted, about 5 minutes.

  3. 3

    Combine Ingredients

In a bowl, combine the rinsed rice, cooked onions and pine nuts, parsley, dill, salt, black pepper, and lemon juice. Mix well.

  4. 4

    Add Water

Stir in 2 cups of water into the mixture and let it sit for 15 minutes to absorb the flavors.

Stuff Grape Leaves

  1. 5

    Prepare Grape Leaves

Remove grape leaves from the jar and rinse them under cold water to remove excess brine. Lay the leaves flat on a clean surface.

  2. 6

    Stuff the Leaves

Place about 1-2 tablespoons of the filling at the base of each grape leaf. Fold the sides over the filling and roll tightly from the base to the tip, like a burrito.

  3. 7

    Arrange in Pot

In a large pot, arrange the stuffed grape leaves seam-side down. Layer them tightly to prevent unrolling during cooking.

  4. 8

    Add Lemon and Water

Place lemon slices on top of the stuffed grape leaves and pour enough water to cover them. Drizzle with remaining olive oil.

Cook

  1. 9

    Simmer

Cover the pot and bring to a gentle simmer over medium heat. Cook for about 45 minutes to 1 hour, or until the rice is tender and the grape leaves are soft.

  2. 10

    Serve

Remove from heat and let cool for a few minutes. Serve warm or at room temperature, drizzled with additional lemon juice if desired.
