Marinated Chicken

    Prepare the Marinade

    In a large mixing bowl, combine olive oil, ground cumin, ground paprika, ground turmeric, ground coriander, garlic powder, ground cinnamon, salt, black pepper, lemon juice, and plain yogurt. Mix well to create a smooth marinade.

    Marinate the Chicken

    Add the boneless chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight.

    Cook the Chicken

    Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Let the chicken rest for 5 minutes before slicing it into strips.

Garlic Sauce

    Prepare the Garlic Sauce

    In a food processor or mixing bowl, combine garlic cloves, mayonnaise, lemon juice, and salt. Blend or whisk until the sauce is smooth and creamy. Adjust seasoning, if necessary.

Pita Bread

    Lightly toast the pita bread in a toaster or on a skillet for a few minutes until warm and soft.

Serve

    Assemble the Shawarma

    To serve, place some sliced chicken on a warm pita, drizzle with garlic sauce, and top with optional toppings such as fresh parsley, diced tomato, and cucumber. Roll up the pita and enjoy!
